makes one cocktail

For the simple syrup:
1 lemon (for squeezing juice and infusing into simple syrup)
1 cup water
1/2 cup honey

For the cocktail:
2 1/2 ounce of bourbon (Bulliet Bourbon)
3/4 ounce freshly squeezed lemon juice
3/4 – 1 1/2 ounces lemon infused simple syrup
ice

Directions:
For the lemon-infused simple syrup: bring 1 cup of water and washed lemon (leftover from the squeezing the lemon juice) to a boil. Add honey to pot and stir, until completely dissolved. Let cool for 5 mins then remove lemon.

For the cocktail: Combine the bourbon, freshly squeezed lemon juice and the simple syrup in an ice-filled shaker. Shake the contents well until chilled, about 10 seconds. Pour over ice and enjoy.
