Baileys Chocolate is a cream liqueur made with Belgian chocolate, bottled at 15.7% ABV. Three cocktails from Baileys’ own recipe collection are below.

What it is
A cream liqueur, which means dairy, and which means two practical things. It needs refrigerating once opened and it has a shelf life, typically around six months after opening. Check the bottle.
At 15.7% ABV it is lower proof than a spirit and higher than most wine. The recipes below all add a full-strength spirit on top of it, so they are not light drinks despite tasting like dessert.
Three cocktails
Chocolate mocha martini
1.5 oz Baileys Chocolate, 0.75 oz vodka, 1 oz fresh espresso, 0.25 oz simple syrup. Shake, fine strain into a coupe. Garnish with vanilla cold foam and three espresso beans.
Chocolate raspberry martini
2 oz Baileys Chocolate, 1 oz blanco tequila, 0.5 oz simple syrup, 5 raspberries, 2 dashes Peychaud’s. Muddle the raspberries, add everything else, shake and fine strain into a coupe.
Smoked biscotti old fashioned
2 oz Baileys Chocolate, 0.75 oz blended scotch, 0.25 oz amaretto. Stir with ice, strain over a large cube. Brandied cherry and grated nutmeg.
Each of these runs close to two standard drinks. The cream and the sugar hide that effectively, which is the thing to know before you make a second one.

The original Irish Cream is the one most recipes assume. Seasonal and limited flavors appear and disappear, so what is stocked at your address will not match a full brand list.
