The Ice Cream Cocktails You Need in Your Life

Ice cream? Scoop me more. Liquor? Pour me another. So what’s even better than eating these two things on their own? Eating them together, and by together, I don’t mean pairing the two – I mean taking our two favorite things and combining them to make even better recipes that’ll definitely float your boat.

Rum Ice Cream Floats


  • vanilla ice cream
  • 1 bottle root beer
  • salted caramel sauce
  • dark rum
  • maraschino cherries (for garnish)

In a drinking glass, drizzle the caramel sauce on the sides and on the bottom. Pour in one ounce of dark rum and two scoops of vanilla. Pour the bottle of root beer on top and add a cherry for garnish.

Champagne and Raspberry Ice Cream Floats


  • champagne
  • vanilla ice cream
  • fresh raspberries
  • raspberry sauce

In a champagne flute, drizzle the raspberry sauce on the sides and on the bottom. Scoop in two scoops of vanilla ice cream and top off each flute with champagne. Add fresh raspberries and the raspberry sauce.

Hint: make sure to chill both the raspberry sauce and champagne before making.

JD Root Beer Floats



Pour (about 2 oz.) of Jack Daniel’s whiskey into a cup. Add the root beer and stir. Top with a big scoop of vanilla ice cream and serve.

Hint: you can adjust the amount of alcohol depending on preference.

Red Wine Ice Cream Floats


  • sparkling red wine
  • maraschino cherries
  • vanilla ice cream


In a tall glass, muddle a couple of maraschino cherries on the bottom and add vanilla ice cream (about a scoop or two). Repeat the process, adding more cherries and another scoop or two of vanilla. Garnish with a few cherries, then adding the sparkling red wine.

Disney’s Pineapple Dole Whip… With a Twist


  • 1 shot whipped vodka
  • pineapple juice (4oz)
  • vanilla ice cream (optional)
  • strawberry (for garnish)
  • lemon (for garnish)


Fill a cocktail shaker half full with ice and add pineapple juice and 1 shot of vodka. Shake and pour into chilled glass and scoop in vanilla ice cream. Top with strawberry and lemon garnish (if desired).

Champagne Unicorn Floats


  • 3 scoops rainbow ice cream or sorbet
  • sparkling wine


Scoop rainbow ice cream (or sorbet) into a glass, pour sparkling wine over and enjoy!

Lemon Sorbet Mimosa


  • lemon sorbet
  • sparkling wine
  • lemon peels for garnish


In a champagne flute, scoop in about two small scoops of lemon sorbet. Add sparkling wine, more sorbet (if you wish) and garnish with a lemon peel.
