makes one cocktail

For the simple syrup:
1 lemon (for squeezing juice and infusing into simple syrup)
1 cup water
1/2 cup honey

For the cocktail:
1 ounce gin or Cognac
1/2 ounce freshly squeezed lemon juice
1/2 ounce lemon infused simple syrup
2 ounces Champagne
Lemon twist, for garnish

Directions:
For the lemon-infused simple syrup: bring 1 cup of water and washed lemon (leftover from the squeezing the lemon juice) to a boil. Add honey to pot and stir, until completely dissolved. Let cool for 5 mins then remove lemon.
For the cocktail: Combine the gin or Cognac, freshly squeezed lemon juice and the simple syrup in an ice-filled shaker. Shake the contents well until chilled, about 10 seconds. Pour over into champagne flute, then top with champagne. Garnish with lemon twist and enjoy.
